Appetizer: *Bourbon glazed salmon, *Taco salad with salsa dressing, *Black-bean, corn and red pepper salad with cilantro and lime vinaigrette, *Classic coleslaw with sweet mayo dressing.
Entree: *Roasted Southwestern chicken, *BBQ pulled beef on toasted baguette, Cowboy mashed potatoes with hot dog bits, *Green beans with jalapeño and lime.
